Heathrow Ale tasting

Yet another batch of over-carbonated-ish beer from my 12 Brews of Christmas Project. This is the batch that did not include any hops at all but was bittered with yarrow. It’s pretty good with cherry and floral notes. After the beer sat awhile it took on too much of the flowery taste which was a bit too strong for my taste. Maybe I will back off the heather tips next time.

I think this is a nice beer for tasting in small amounts. The wild cherry bark was stronger than I expected. It’s a good one and I think I can also use it as a base for experimenting with some hops.

One thing to note about the carbonation… I primed with Raw Sage Honey which most likely included wild yeast and I also added a priming capsule which probably took the carbonation over the top. The other weird thing is that the capture casing did not entirely melt and I actually swallowed it. I don’t think that I will be using those again.

This was beer #8 in the “12 Brews…” series. I don’t know why I am tasting out of order. Sorry.
