12 Brews of Christmas: #7 Coriander Ale

On the 7th Day of Christmas… we’re going with an old school style circa 17th century coriander ale based on a recipe from my favorite brewing book, Sacred and Herbal Healing Beers. It’s good. Trust me.
This is another very easy brew to throw together if you have very limited time. The ingredients do not include hops because I think this was a pre calvinist recipe:)
Anyway, it can’t be easier than this. Here are the ingredients:
1 gal H2O
1 lb. Light Dry Malt Extract
1/4 ounce crushed coriander seeds
1/2 oz orange peels
I used Safale 04 yeast for this batch.
I will use sage honey for bottling in a couple of weeks.
Wow, I have brewed 7 batches in 7 days. What say you, 5-gallon folks?
After one week, I am pretty sure I can do it. I must try not to reflect on the craziness of it all. Hopefully after it’s all over I’ll have a few bottles to share with Santa and friends.
