Moment of Truth: Lemon Verbena, Date, Calamansi Limes

Boy, I am not quite sure what to make of this. On one hand I am disappointed with the lack of carbonation, but this brew is very sparkling, and has a nice “spirit” to it. It isn’t wimpy on flavor.

The lemon lime comes through but it is a bit bitter. I am getting more of the rind flavor. I think adding some Belgian candi sugar would help this or more brown sugar. A few bay or sage leaves could also make it pop a bit more. It is a pretty good sour beer, although that wasn’t my intention.

cherry-bittersThis might be improved with some bitters splashed on top to wake it up. Let me try some sour cherry bitters…. not bad. It helps stabilize it a bit.

I think I went a little over the top with this concoction, but I can’t complain. Unfortunately, it just doesn’t “wow” me.

This is why we make a gallon or less at a time… On to the next experiment.
